Turkey Taco Tuesday Salad

Looking for a quick and healthy dinner to satisfy your Taco Tuesday cravings?

How about switching things up with this hearty Taco salad that can be made in under 15 minutes!

Healthy Ground Turkey Taco Salad

HEALTHY TURKEY
TACO SALAD

Ingredients:

  • 1 lb. ground turkey

  • 1 taco seasoning packet

  • 2-3 romaine lettuce hearts

  • 1 can dark kidney beans, drained and rinsed

  • 3/4 c shredded "Mexican Blend" cheese

  • 1/2 onion, chopped

  • 1 c cherry tomatoes, cut in half/quartered

  • Tortilla chips, crushed

  • French or Catalina dressing

  • Optional Toppings: avocado, corn, black olives, cilantro...get creative


Make It:

  1. Cook ground turkey/taco seasoning according to directions, set aside.

  2. Chop romaine lettuce, onions and tomatoes and mix in large bowl.

  3. Add drained kidney beans and cheese blend to vegetables, toss to combine.

  4. Before serving, top with 3-4 oz cooked ground turkey, crushed tortilla chips and dressing.

  5. Serve and enjoy!
