Crockpot White Bean Chicken Chili

Winter meals at our house usually consist of warm cozy comfort food.

This chili has become one of our favorites, not just because it is SUPER easy to make, but because it is packed with flavor, protein and wholesome ingredients!

NOTE: This recipe could easily be made VEGAN by substituting chicken broth for vegetable broth and eliminating the chicken!

INGREDIENTS

  • 1 1/2 pounds boneless/skinless chicken breast, cut into 1 inch pieces (do not add if making vegetarian chili)

  • 1/2 cup diced sweet onion

  • 1 (14.5 oz) can diced tomatoes with liquid

  • 2 Tbsp. tomato paste

  • 1 1/4 cups chicken broth (use veggie broth if making vegetarian chili)

  • 2 tsp. chili powder

  • 1 tsp. cumin

  • 1/4 tsp. crushed red pepper flakes

  • 1/2 tsp. cayenne pepper

  • 1/2 tsp. garlic powder

  • 1/2 tsp. black pepper

  • Sea salt to taste

  • 2 (15.5 ounces) cans Cannellini beans, drained and rinsed

HOW TO MAKE IT

  • Place all ingredients into slow cooker

  • Cook on low for 8 hours

  • Serve with any combination of the following: biscuits, tortilla chips, shredded cheese, Greek yogurt, avocado
