Roasted Veggie & Hummus Quesadilla
Meatless Monday has become a regular thing at our house, and I’ll be honest, sometimes it is tough to come up with new, fun recipes that are not only healthy but delicious as well.
Today I was craving something savory, hearty & flavorful… which lead me to this beautiful creation:
ROASTED VEGETABLE + HUMMUS QUESADILLAS!
I won’t bore you with the details on how the flavor combination feels like a party in your mouth (seriously though… does anyone else get annoyed when you go to a food blog and have to scroll through the details of the writers day before getting to the good stuff?!) … just take my word for it and give the recipe a try!
INGREDIENTS:
2 whole wheat tortillas
2-3 Tbsp. Hummus
2-3 Tbsp. Feta cheese (eliminate for vegan diet)
1 cup roasted vegetables (I used peppers, mushrooms, onion, eggplant)
Handful of spinach
HOW TO MAKE IT:
Spread hummus on one tortilla
Place tortilla onto greased skillet/pan
Sprinkle feta cheese over hummus
Top with roasted veggies & spinach and cover with other tortilla
Cook on medium/high and flip when tortilla gets brown and crispy
Repeat on other side
Eat & Enjoy!
