Whole Wheat Pumpkin Streusel Loaf

This delicious pumpkin streusel loaf is is rich in fiber, potassium and vitamins and is the perfect addition to any meal plan!
Whole Wheat Pumpkin Streusel Bread Recipe
Ingredients:
1.5 c whole wheat flour
1 TBSP pumpkin pie spice
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp sea salt
1 c pumpkin puree
1/2 c unsweetened applesauce
2 eggs
1/2 c honey
1 tsp vanilla extract
Streusel Topping
1/4 c rolled oats
1/4 c palm sugar (or light brown sugar) unpacked
2 TBSP butter, melted
1 TBSP whole wheat flour
Directions:
Preheat oven to 350 degrees F. Spray 9x5 bread pan with cooking spray
Mix dry ingredients (flour through salt) in a large bowl
Mix wet ingredients (eggs through vanilla) in separate bowl
Combine wet and dry ingredients, stir until combined
Pour dough into bread pan
Mix all streusel ingredients together in a small bowl until combined
Sprinkle streusel on top of bread dough in pan
Bake for 45 minutes or until a toothpick inserted in the center comes out clean
Eat and enjoy!
NOTE/TIP: This bread freezes very well! Make a double (or triple if you are feeling ambitious) batch and once the loaf cools, wrap tightly in saran wrap/foil to store in freezer!
