Pumpkin Spice Energy Bites
Fall is officially here - which means the pumpkin spice frenzy is officially in full swing!
If you’re looking for a delicious (and healthy) snack that not only gets you your “pumpkin fix”, but also provides a perfect mid-afternoon energy boost, you must try these Pumpkin Spice Energy Bites!
Made up of simple, natural ingredients these satisfying energy bites are so easy to make and are the perfect fall snack for your whole family to enjoy!
PUMPKIN SPICE ENERGY BITES
YIELDS: 18-20
INGREDIENTS
1/2 cup pumpkin puree
4 medjool dates, pitted
1/4 cup pumpkin seeds
1 cup rolled oats
1/4 cup hemp or chia seeds
1 teaspoon pumpkin spice
2 tablespoons maple syrup
1 tablespoon peanut butter
1/3 cup chocolate chips
INSTRUCTIONS
Combine 1/2 cup of the oats, dates and peanut butter in a food processor. Process until finely chopped.
Transfer the mixture to a large bowl, add the remaining ingredients and mix together until combined.
Optional Step: refrigerate the mixture for an hour (not required, but this will make it easier to work with)
Roll the mixture into balls, roughly the size of a ping pong ball
Store in an airtight container in the refrigerator for up to a week.
Note: these freeze very well! Feel free to double the batch and store some in the freezer so you have these delicious treats on hand all fall!
