Honey Millet Granola

Call me crazy, but when asked the question "what do you want for breakfast?" I would pick a bowl of granola/cereal/oatmeal over anything.

Which is why my new obsession, homemade honey millet granola has become a staple in my kitchen and a regular part of my weekly breakfast menu!

As mentioned before one of my goals this year is to start doing a lot more "DIYing" around the house with not just my household products, but also the food that my hubby and I eat. 
I modified this recipe from the cookbook Thug Kitchen and let me tell you... it is AMAZING. Its all natural, simple to make, and tastes a HELL of a lot better than any store bought granola I have ever tried! 


What you need:

  • 3 cups rolled oats

  • ½ cup sunflower seeds

  • ½ cup sliced almonds

  • ¼ cup millet (uncooked)

  • ½ cup honey (or maple syrup)

  • 1/3 cup olive oil

  • ½ tsp. vanilla extract

  • 1 tsp. ground cinnamon

  • ½ tsp. salt

How to make it: 

  1. Preheat oven to 300 degrees. Line a baking sheet with parchment paper or foil

  2. In a large bowl, mix the oats, seeds, nuts and millet 

  3. In a medium glass, stir together the honey, oil and vanilla. Pour this all over the dry ingredients and stir until everything looks coated evenly

  4. Add the cinnamon and salt and stir again 

  5. Pour everything evenly onto the baking sheet and place in the oven for 40 minutes. Stir every 10 minutes or so to ensure even cooking. 

  6. You will know the granola is done when everything looks toasted and not sticky. 

  7. Let the baking sheet cool (the granola will continue to dry out) and then store in an airtight container for up to two weeks…. But trust me, it will not be around that long : )
