Walnut Almond + Seed Butter

I would like to introduce you to your next obsession: HOMEMADE NUT BUTTER.

As a self-proclaimed “nut butter junkie” I am not exaggerating when I say I go through a generous amount of nutty goodness on a weekly basis. Seriously though, whether it’s in smoothies, on sandwiches, drizzled over ice cream, smeared on pancakes, or eaten directly from the jar with a spoon, let’s just say I stand firm when I say that nut butter makes everything better.

Flavor aside, there are actually several health benefits to adding nut butter with minimal ingredients into your diet!

The recipe below contains only walnuts, almonds and sunflower seeds which:

INGREDIENTS

  • 1.5 cups Raw Almonds

  • 1.5 cups Raw Walnuts

  • 1 cup Raw Sunflower Seeds

  • 1/2 tsp. sea salt (optional)

  • Optional Add-Ins: honey, chocolate, dried fruit, vanilla extract, ground coffee, flax or chia seeds

INSTRUCTIONS

  1. Preheat oven to 300 degrees F. While the oven is preheating pick your favorite combination of nuts to use (the possibilities here are seriously endless) and place them on a baking sheet to roast.

  2. Roast the nut combination for about 8-10 minutes (you should be able to smell them roasting) being cautious to not burn them. Let cool.

  3. Once cooled, place the nuts in a high speed blender or food processor and mix on high speed for about 10+ minutes until a creamy butter forms. *NOTE: the nuts will go from whole to a fine meal, to clumps to butter. This process is loud and takes awhile. I like to pause the mixing every 3-5 minutes just to give the machine a break :)

  4. Once the butter is at the consistency you like, add the sea salt and any add-ins you enjoy to taste. Blend for a few more seconds to mix everything in! Transfer nut butter to a clean glass jar and store in the refrigerator for 3-4 weeks (sometimes longer).

  5. Eat and enjoy!
