Coffee Vanilla Peanut Butter

Did I mention that peanut butter is my favorite food group?! Seriously though, I could eat pb on a daily basis and neva eva get sick of it. 

Just when I thought my love for the food couldn’t get any greater, I discovered THIS recipe and my life changed for the better. 

COFFEE VANILLA PEANUT BUTTER is a gift from the Gods and it seriously goes amazing on everything. I have it in my smoothies, on my toast, mixed in with oatmeal and just straight out of the jar. 

Don’t take my word for it….. try it for yourself!

Ingredients:

  • 4 c. unsalted roasted peanuts

  • 1/3 c. granulated sugar of choice

  • 2 -3 T. freshly ground coffee

  • 1 Tbsp. olive oil

  • 1 Tbsp. vanilla extract

  • 1 tsp. fine sea salt (optional)

How to make it:

  1. Place the peanuts in a food processor/blender. Process until the peanuts begin to look smooth. Do not overprocess!

  2. Add the remaining ingredients and blend just until mixed

  3. Store in a glass jar in the refrigerator for up to 6 months for longest shelf life.
