Clean Crockpot Minestrone Soup

If you look out the window and see nothing but SNOW….. its time to invite some warm into your home with this clean vegan minestrone!

When Mother Nature decides to take a DUMP on your state (snow… I’m talking snow people), it only makes sense to make a batch of your favorite soup that give you ALL the warm and fuzzy feels. This CLEAN CROCK POT MINESTRONE uses the best veggies that Mother Nature has to offer (when she’s not snowing on your parade) and will leave your belly full and satisfied.

Ingredients

  • 1 small onion, diced

  • 1 stalk celery, diced

  • 2-3 carrots, peels and diced

  • 1 medium zucchini, sliced

  • 2 cups fresh green beans

  • 1 cup fresh peas

  • 2 cups kale, coarsely chopped

  • 2 cups low-sodium vegetable broth

  • 1 (15 oz) can dicd organic tomatoes, with liquid

  • 1 (15 oz) can kidney beans, drained and rinsed

  • 1 tsp. sea salt

  • 1 tsp. fresh ground pepper (to taste)

  • 1 tsp. garlic powder

  • 1/4 cup parmesan cheese

Directions

  • Add all ingredients to a crock pot, except kale and parmesan cheese.

  • Cover and cook on low for 5-6 hours

  • When the soup is cooked, add kale

  • Plase lid back on slow cooker and allow kale to wilt (approx. 5-10 minutes)

  • Sprinkle with parmesan cheese and serve
